Bar 1661
Bar 1661 is considered one of the best cocktail bars in Dublin. They are also known to be a staunchly Irish and fiercely independent establishment. I now know why. When we walked in our umbrellas were wet and right away the waitress showed us where we could store them, so they dry. The waitress was welcoming and mentioned if we sat at the bar, we would get the full experience and the bartenders would be able to tell us about our cocktails. So we bellied up to the bar and we were not disappointed.
We tried a couple of their specialty cocktails and were also given a free shot of Poitin. Quite a few of the cocktails are made using Poitin. Poitin is made with potatoes and is considered Irish moonshine. It is much smoother than moonshine in the United States.
We tried the homemade hummus, it was served with crisp lavosh flatbread and the chicken liver pate, with red onion chutney, served with toasted fruit bread. It was delicious. The chicken liver dish was beautifully plated and was unbelievably tasty.
